Blackberry Faux-Jito

When you need to cool down during the summer, this spritzer is for you. We make it a little special with a mint simple syrup, which will impress even your bougiest of friends.
Tip: Stir in any leftover simple syrup to lemonade, iced tea, or seltzer.
Course Mocktail
Servings 4 drinks

Ingredients
  

For the Mint Simple Syrup

  • 1/2 cup packed fresh mint leaves
  • 1 cup granulated sugar
  • 1 cup water

For the Mocktail

  • 1 cup blackberries
  • 1 teaspoon granulated sugar
  • 1/2 cup lime juice
  • Ice
  • 2 cans (12-ounce) seltzer
  • Fresh mint, for garnish

Instructions
 

Make mint simple syrup:

  • In a small pot using a wooden spoon, crush mint leaves. Add sugar and water and bring to a boil over medium heat, stirring to dissolve sugar. Boil 3 minutes. Let cool, then strain out mint leaves, pressing with a wooden spoon to help release all liquid.

Make mocktail:

  • In a small bowl, combine blackberries and sugar and use a wooden spoon to crush blackberries.
  • Divide mixture among glasses and add 2 tablespoons simple syrup and lime juice to each glass. Fill glasses with ice, then top off with seltzer and garnish with mint.
