Classic Bee's Knees Cocktail

Equipment

  • Cocktail Shaker

Ingredients
  

  • 1-1 1/2 ounces honey syrup (See Step 1, use a local honey, if you can)
  • 2 1/2 ounces gin, (Preferably local gin)
  • 2-2 1/2 ounces fresh lemon juice, depending on how tart you want your drink
  • Lemon twist or wheel for garnish

Instructions
 

  • In a small sauce pan, warm honey and water (a 60/40 mix) until the honey is thinned and well incorporated, but still viscous. Cool it in the fridge.
  • When you’re ready to make your cocktail, add all ingredients to a cocktail shaker and give it a dry shake (so, no ice). This will give the drink a frothy head.
  • Add ice to the shaker and shake again. Strain the drink into a coupe glass (you can strain it twice to remove any ice bits, if you like), and garnish with a lemon twist or wheel.
