In a small sauce pan, warm honey and water (a 60/40 mix) until the honey is thinned and well incorporated, but still viscous. Cool it in the fridge.
When you’re ready to make your cocktail, add all ingredients to a cocktail shaker and give it a dry shake (so, no ice). This will give the drink a frothy head.
Add ice to the shaker and shake again. Strain the drink into a coupe glass (you can strain it twice to remove any ice bits, if you like), and garnish with a lemon twist or wheel.
