Blueberry Lemonade Margaritas
The secret in these margs? Blueberry simple syrup, which will make you feel like a bona fide mixologist.Tip: Cook blueberries in some water, sugar, and lemon juice until they burst—the leftover juice is what you’re after. Use it here, then the leftovers in seltzer, vanilla ice cream, even yogurt.
Ingredients
For the blueberry simple syrup
- 1/4 cup granulated sugar
- 1/4 cup water
- 1/2 cup blueberries
- Zest of 1/2 lime
For the cocktail
- 2 tablespoons kosher salt, for rimming glasses
- 2 tablespoons granulated sugar, for rimming glasses
- 1 lemon, cut into wedges, for rimming glasses and garnish
- 1 cup tequila
- 1/2 cup triple sec
- 1 cup lemonade
- Ice
- Blueberries, for garnish
Instructions
Make blueberry simple syrup:
- In a medium saucepan over medium heat, combine sugar and water and stir until sugar has dissolved. Add blueberries and lime zest and bring mixture to a boil. Reduce heat and simmer until blueberries have burst, about 5 minutes.
- Remove from heat and let cool 10 minutes, then strain mixture into a clean jar. Let cool completely.
Make cocktail:
- On a small plate, stir together sugar and salt. Rim each glass with a lemon wedge, then dip in sugar-salt mixture. Divide tequila, triple sec, and lemonade among glasses. Fill each glass with ice, then top with blueberry simple syrup. Garnish each with a lemon wedge and more blueberries.
